Job Summary
Under the general direction of the Catering and Concessions General Manager, the Assistant General Manager, Catering and Concessions is responsible for assisting in the oversight of the multi-faceted catering operation with an emphasis focusing on business management practices (i.e. operations management, financial controls including profit generation, human resources managements, interdepartmental relations, project management, menu/product change management, monitoring vendor relationships and division programs). Assists the Catering and Concessions Operations General Manager in implementing the departmental vision.
The Assistant General Manager, Catering and Concessions ensures the service provided by the Catering and Concessions staff is done in a professional manner and oversees the continued training of the service team. This position is responsible for driving sales, controlling costs, and supervision of the Catering and Concessions unit and its staff on a day-to-day basis. This position has oversight of, and provides guidance/mentorship to, the Catering and Concessions Event Supervisors and the service team comprised of the Event Specialists and the Food Service Worker Leads. In partnership with the unit's Executive Chef, this position oversees the service and execution of all events planned through the Catering and Concessions unit and is responsible for implementing accountability controls while working closely with staff to ensure maximum operational efficiency.
Responsible for managing campus logistic policies, including the use and maintenance of catering delivery vehicles and service fleet. Support daily operations including logistical organization and planning for daily events, executing customer service standards, personnel and labor management, employee scheduling, inventory management, menu execution, promotional marketing opportunities, staff safety and equipment, facility and vehicle maintenance. Monitor adherence to all quality standards and assures that service and product offerings meet campus needs in cost efficient manner. This position is responsible for managing cash handling policies and procedures. Access and audit reports weekly, monthly, and annually to ensure budgetary goals are met and are on track.
This position will be expected to uphold the highest level of confidentiality as it may be exposed to information through providing services which may be of a confidential nature.
This position must be willing and able to drive all catering vehicles.
This position is responsible for all aspects of the Catering unit, including product and inventory management, product costing, logistical organization of daily events including food display and event aesthetics. This position is responsible for providing excellent customer service and quality products in a safe and aesthetically pleasing environment. Establishes operational objectives and initiatives and seeks/provides resources to meet schedules and goals. Establishes and ensures adherence to budgets, work plans, and performance requirements. Identifies risks and responds accordingly. Responsible for implementing accountability controls of staff and working closely with staff to ensure maximum operational efficiency and effective implementation of programs.
Involved in executing processes that affect immediate operation(s) and may have campus-wide impact.

Qualifications
Minimum Qualifications

Experience in leading, directing and supervising in a high-volume catering, restaurant, or dining service-related field and managing shifting daily priorities and objectives in the past 10 years.
Experience identifying and overseeing/directing the elements and steps of service needed to conduct a service-oriented event.
Experience utilizing decision making, reasoning, development of ideas, problem solving and performing operational analysis and quality control audits.
Experience with industry standards for dining services including PCI compliance, Point of Sale maintenance, managing cash handling policies and procedures.
Experience in managing operating budgets with short and long-range financial forecasts; managing financials, labor, food handling and storage policies and procedures, quality control, health and safety standards.
Experience utilizing interpersonal communication skills to clearly and effectively interact with individuals of varying backgrounds and perspectives to research and secure information and to resolve problems.
Experience using writing skills to prepare a variety of correspondence, reports, policies and procedures, agreements, training documents, and performance evaluations.
Preferred Qualifications
ServeSafe Certification or equivalent food safety certification.
Experience using computerized systems, including inventory, ordering management, and time-keeping programs in a catering, concession, restaurant or a dining service-related field.
Experience recognizing, anticipating and adapting to changing business needs through problem solving, based on analysis of unique issues/problems without precedent or established procedure.
Knowledge analyzing, interpreting, and applying personnel policy and procedures, collective bargaining agreements and employment law, advising management and managing sensitive employee and labor relations problems.

Use computer equipment for extended periods of time (6-8 hours per day).
