Job Description: • Performs related duties as required or requested by the General Manager. • Answers phone calls and mail regarding catering and meeting functions in a timely manner. • Books all events for members and guests in a timely matter. • Consults with guests in courteous and hospitable manner making every attempt to answer any possible questions. • Prepares catering contracts, as needed according to the established procedures as well as in advance in order for the contracts to be reviewed and altered, if necessary. • Gives the proper direction and instructions for service of food, beverage and table arrangements for each banquet function to the banquet staff. • Works closely, hospitably, and cooperatively with the Bar Manager, Executive Chef, and Maintenance Supervisor. • Works closely, hospitably, and cooperatively with the house committee and staff for all club functions. • Maintains accurate records of each function including as much detail as possible. • Calculates and prepares billing for each function and forwards all information to the Office immediately following the function. Responds to questions and concerns about billing, and informs the office of any errors. • Initiates and justifies the need for additional personnel as the workload may require. Works closely and cooperatively with Human Resources Manager. • Supervises the orientation and training of personnel to maximize their work potential in minimum time. • At all times, projects a favorable image of Sequoyah Management to promote its aims and objectives as well as foster and enhance public recognition of the Club's operations. • Directly assists in supervising food servers. Makes schedules for staff, counsels, motivates and disciplines staff. • Prepares seating charts showing table locations and numbers. • Observes food service in the dining areas during and throughout events. Understands the pricing market conditions, and makes competitive decisions on prices, wines, and menus.
• Bachelor's Degree or equivalent work experience accepted. • 3-4 years’ experience in Hospitality environment, preferably Country Club. • Catering Sales – 3 years required
