Founded in April of 1927, Midland Country Club is a traditional private country club offering a family oriented experience, exceptional facilities, personal service and lifelong relationships. The annual food and beverage sales are $4 million. MCC currently has 775 active memberships with a waiting list to belong.
In the capacity as Director of Catering you will report directly to the Clubhouse Manager. You will work in conjunction with all other food and beverage managers and Department Heads involved in special events involving the Catering Department. You will be wholly responsible for the Club’s Catering operations to include booking, billing and collections.
Essential Duties and Responsibilities
Solicit, negotiate and book new and repeat clients in an effort to maximize food and beverage revenues to meet and/or exceed budget goals
Assist clients in the planning of their event, including package selection, menus, entertainment, décor, billing, and other aspects of event planning as needed
Prospect for new catering business using a wide variety of methods
Oversee booked events by partnering with the banquet staff to ensure successful event setup and execution while meeting and/or exceeding client experience and satisfaction
Assist in creating, revising and distributing BEOs to all departments
Actively upsell each business opportunity to maximize revenue
Ability to generate creative and innovative menus while working closely with the Executive Chef and Food and Beverage Director on pricing of specialty menus
Produce contracts and BEOs along with maintaining detailed files, records and trace systems
Ability to communicate client details and changes to all departments, ensuring that customer’s needs and expectations are met
Answer online and telephone queries in a prompt and professional manner
Develop and maintain knowledge of catering market trends including competitor’s strengths and weaknesses, economic trends, supply and demand, etc.
Monitor blocked space to ensure client is meeting their contractual obligations; initiate release of blocked space on cut-off date to allow sale to other clients
Provide administrative and operational support to the Executive Administration
Process incoming vendor invoices for catering events for final approval
Perform and additional job-related duties and projects assigned with attention to detail and accuracy
Work closely with the membership department in obtaining information on new Members and their needs
Participate in weekly BEO, staff, revenue, and catering sales meetings
Ability to develop original and creative content while staying up to date with current trends
Forecast projected annual banquet sales to be submitted to Executive Management for inclusion in the Club’s annual budget
Effective management of your annual budget, including meeting forecasted projections and controlling expenses
Adheres to all the various written mandatory standards of operation, policies, procedures, manuals, memos, oral instructions, etc., all of which go to make up the essential functions of the job
Bachelor’s degree preferred
3+ years’ experience in catering sales in a private club or similar upscale environment
Experience in budgeting and forecasting
Possess an outgoing personality with the ability to communicate effectively
Ability to present pertinent event information to staff and clients in an organized and timely fashion
Ability to work a flexible schedule that includes weekends, evenings and holidays based on client and club needs
The ability to handle pressure and maintain composure and professionalism at all times
Strong culinary and beverage knowledge a must
Proven ability to plan and organize events effectively with an acute sense of detail
Excellent interpersonal and computer skills, both written and verbal
Strong administration skills including a command of all MS Office products required
